Highfield Level 3 Award in Supervising Food Safety in Catering RQF (Food Safety Level 3) is a must for all heads of departments with the responsibility of preparing or serving food.

Food Safety Level 3 is an advanced food safety course that has been created as a cost effective and time efficient option; candidates are able to learn the coursework at their own pace and on their own time through a Virtual Learning Environment (VLE) and then take the classroom-based exam at our training centre in Antibes. Prior to the exam, our tutor will provide a brief refresher course of the applicable course materiel. It is fully MLC 2006 compliant/MCA approved.

Who Should Take This Course?

It is ideally suited to people who are responsible for supervising other members of staff, such as team leaders, supervisors and managers across all sectors of catering, whether the business is small, medium or large. It is particularly relevant for those who have to develop or monitor HACCP based food safety management procedures and systems.

Chefs working on commercially registered vessels carrying more than 10 crew members on Cayman Island registered vessels are required to hold this certification.

What Will You Learn?

The aim of this course is to identify problems and to recommend solutions within food preparation and delivery areas.

This course will provide you with a greater knowledge of the management of efficient food safety practices.

Candidates will also learn the basic principals of HACCP food safety management procedures and systems.

Food contamination hazards and controls
Food poisoning and foodborne disease
Personal hygiene
Storage/temperature control
Food spoilage and preservation
Food premises and equipment
Cleaning & disinfection
Pest control
Supervisory management/HACCP
Food safety legislation.

Examination: 90 minutes, 45 multiple choice questions. Minimum passing grade is 60%, a total of 27 correct answers. A Distinction will be awarded for 38 to 45 correct answers.

Booking:  Exam is scheduled every other Wednesday (with a few exceptions).

Cost:  490 euros (includes VLE access, examination and certification)

Length:  Candidates can expect to spend 8-12 hours completing the coursework online through the VLE

Exam: 1/2 day classroom-based 9:00am – 12:30pm (brief refresher course followed by 90 minute exam)
